Yawen’s Awesome Tacos

So, what do you need to make an awesome taco?  
Vegan, Gluten-Free, Soy-Free

Ingredients:

  • Traditional corn tortillas*
  • Olive oil
  • Onions
  • Mushrooms
  • Cashew ricotta**
  • Avocado
  • A pinch of nutritional yeast
  • A pinch of mustard
  • A pinch of cilantro
  • A few drops of lime juice
  • Your choice of hot sauce

Optional:

  • Vegan cheese (I recommend Daiya)
  • Vegan butter (Go without to be soy-free)

Instructions:

Lightly grease pan with olive oil. Sautee chopped onions and sliced mushrooms together for a few minutes or until onion turns slightly brown, then put it aside (in pan or plate). Place tortilla over heat - add vegan cheese if desired, or just cashew ricotta. After a minute, add the sauteed onions and mushrooms on top and turn down the heat to medium if it isn’t already. Wait until the tortilla has hardened and transfer to a plate. Add the rest to taste: nutritional yeast, mustard, cilantro, avocado, lime juice, hot sauce.

No tomatoes. What??!
NIS = not in season. It’s winter. I’m in New York not fair-weathered California where tomatoes are a-plenty. Right now even imported tomatoes in general taste bad, unless they’re greenhouse grown. But they are usually tasteless to me. 

Mustard (and/or other ingredient you find funny). What??!
Hey I just gave away my secret recipe - what you complaining about? It tastes good to me.

*These are naturally gluten-free. Don’t go for the “fancy” ones which might have wheat.
**To be prepared beforehand. Soak cashews overnight and next day in a food processor, blend with lemon/lime, nutritional yeast, sea salt.
